DESAFÍOS EN LA ENSEÑANZA-APRENDIZAJE DE LAS OPERACIONES UNITARIAS DURANTE LA PANDEMIA (CHALLENGES IN TEACHING-LEARNING OF UNIT OPERATIONS DURING THE PANDEMIC)

La presente investigación tiene como objetivo analizar los desafíos que los estudiantes y docentes de nivel superior de la carrera de Ingeniería en Industrias Alimentarias del TecNM en Roque se han enfrentado durante los meses de contingencia en las asignaturas que corresponden a las operaciones unitarias y como se ha visto afectado su nivel académico. Se evaluó la deserción como factor de impacto en las materias durante semestres previos y durante la contingencia para lograr una comparación y establecer las estrategias factibles para la enseñanza de las asignaturas. El instrumento de evaluación determino las características de los estudiantes y docentes las cuales definieron las circunstancias por la que cada uno de ellos está viviendo para cumplir el objetivo de las asignaturas. Los resultados indicaron que las condiciones de aprendizaje de los estudiantes no son la más adecuada para lograr un máximo rendimiento, ya que el 58% de estos han sentido que su salud se ha visto afectada considerablemente. Así como los desafíos por los que el docente atraviesa para lograr el cumplimiento de su labor. Sin embargo, los estudiantes afrontan su aprendizaje con la mejor actitud ya que las asignaturas son prerrequisitos para evitar el rezago.

Abstract
The present research aims to analyze the challenges that students and higher-level teachers of the Engineering in Food Industries of the TecNM in Roque have faced during the months of contingency in the subjects that correspond to unit operations and how their academic level has been affected. Dropout was evaluated as an impact factor on the subjects during previous semesters and during the contingency to achieve a comparison and establish feasible strategies for teaching the subjects. The assessment instrument determined the characteristics of the students and teachers which defined the circumstances by which each of them is living to meet the objective of the subjects. The results indicated that the learning conditions of the students are not the most adequate to achieve maximum performance, since 58% of them have felt that their health has been considerably affected. As well as the challenges that the teacher goes through to achieve the fulfillment of their work. However, students face their learning with the best attitude since the subjects are prerequisites to avoid lag.
